AROMATIC SALTS

We could not live without salt, but too much salt is unhealthy. For this reason, following the indications of the WHO, the Cervia Salt Pan has created a range of aromatic salts, which combine the quality and goodness of Cervia Sweet Salt with the olfactory qualities of fresh herbs, many of which are produced directly in the salt pan. This idea gave rise to five aromatic salts that can be used in the kitchen, depending on the flavour and effect you wish to achieve.  

Cervia salt pan’s range of aromatic salts has considerably expanded over the years. Today, together with the “Great Classics”, a range of gourmet aromatic salts is also available, developed with the support of prestigious chefs.

CERVIA SALT WITH AROMATIC HERBS FOR MEAT

Mixed with rosemary, sage and laurel, it enhances the flavour of meat, especially roast meat, and much more.

It is a mixture of sweet salt and aromatic herbs, freshly dried and locally sourced. Rosemary, sage and laurel enhance the flavour of meat, especially roast meat, and much more. It is a seasoning salt that combines the characteristics of Cervia sweet salt with the flavour of aromatic herbs. Most of the herbs come from the vegetable garden that was established at the Cervia salt pans by “Lo Stelo”, a cooperative led by young disabled people. This aromatic salt also contains traces of juniper and pepper, perfect for seasoning raw, cooked, grilled and roast meat, as well as cooked vegetables.

CERVIA SALT WITH AROMATIC HERBS FOR FISH

With fresh thyme and chives and a pinch of chili pepper and a touch of garlic, ideal for seasoning fish.

Fresh thyme and chives are added to Cervia Sweet Salt in just the right amount, with a touch of garlic and chili pepper (a nod to the local tradition). This salt is ideal for seasoning fish and raw vegetables.

CERVIA SALT WITH A TOUCH OF THE EAST

It is perfect on roast potatoes but also on white meat, on fried dishes and on vegetables, especially if they are caramelised or seasoned with balsamic vinegar.

In this case the aromas of Cervia are combined with those of Venice and the East. This is why it is also called “Sale dei dogi” (Salt of the Doges). The whole sweet sea salt is combined with sesame, ginger, turmeric and cumin, which gives it a golden orange colour similar to that of pure gold. It has a very particular sweet and sour flavour, reminiscent of the Silk Road, the Salt Road and the millenary history of salt trade, following the routes towards North-Eastern Italy. It is ideal on roast potatoes and white meat, on fried dishes and on vegetables, especially if they are caramelised or seasoned with balsamic vinegar.

CERVIA SALT WITH SEAWEED

This sweet salt is bursting with aromas of sea oak, juniper, mint, lavender, cloves, salt and pepper. Perfect for seasoning meat, fish and vegetables.

This sweet salt is rich in iodine and is bursting with aromas of sea oak, juniper, mint, lavender, cloves, salt and pepper. It can be used on all cooked or raw dishes. This salt has a rich and full flavour and is also quite healthy thanks to its high iodine content.

CERVIA SALT WITH SALICORNIA

It is ideal for seasoning fresh vegetables, but also as a substitute for fish stock cubes to prepare soups and pasta dishes.

It is one of our newest products, rich with all of the aromas that can be found in the salt pans. Salicornia is a plant that grows spontaneously along the edge of the salt pans since it thrives in saline environments. Its bitter taste is tempered by the sweetness of the salt and softened by the addition of parsley and fennel. This salt is perfect for fresh vegetables but also as a replacement of fish stock cubes to prepare soups and pasta dishes. For example, in tagliolini pasta with seafood, it enhances the taste of mussels and crustaceans. Cervia Salt with Salicornia will add a fresh flavour to any dish.

CERVIA SWEET SALT WITH MADAGASCAR VANILLA

Cervia Sweet Salt with Madagascar Vanilla goes well with prawns, scallops, shellfish, fish in general, vegetables, dessert and sweets.

Cervia Sweet Salt, as revisited by chef Domenico Magnifico and the “Tonino Guerra” Hotel and Catering School of Cervia. They mixed our Cervia Sweet Salt with Bourbon-Madagascar vanilla, which is probably the most sought-after type of vanilla. Vanilla, which is derived from the seed pods of a particular type of orchid, is the most famous spice in the world. Fresh vanilla fruits, often called “beans”, have no aroma. The characteristic aroma results from enzymatic action during curing. Vanilla owes its characteristic aromatic punch to vanillin, a compound that comes from the vanilla bean. Aroma intensity may vary from plant to plant. Bourbon vanilla has the highest vanillin content in the world (between 1.6% and 2.4%). We only use fresh vanilla in our salt, giving it a somewhat sweet flavour and an intense and rich aroma, especially when used on hot food.

CERVIA SALT WITH CHILI PEPPER FROM CALABRIA

Cervia Sweet Salt with chili pepper from Calabria is ideal for seasoning white meat, grilled fish and cooked vegetables.

Cervia Sweet Salt with chili pepper from Calabria was born from a collaboration between Salina di Cervia, chef Domenico Magnifico and the “Tonino Guerra” Hotel and Catering School of Cervia. To create it we use a blend of chili peppers specifically made for us by “Suriano”, a company that sells traditional products from Calabria. We didn’t choose Calabria by chance! Through the PEPIC project, promoting the cultivation of chili peppers, the Council for Agricultural Research and Economics (CREA) has shown that Calabria has the perfect soil and climate for growing chili peppers. Suriano’s mix of peppers consists of Diavolicchio Diamante peppers and round “ferretto” peppers from Amantea. The Diavolicchio Diamante peppers were specifically chosen for their bright colour and intense aroma, whereas the round “ferretto” peppers, which are native to a small and lesser-known area of Calabria, gives a nice kick to this aromatic salt. As a result, this salt is just the right side of spicy, enhancing flavours without overwhelming the palate.

Cervia Sweet Salt with PGI Balsamic Vinegar of Modena is ideal for seasoning white and red meat, crustaceans and raw vegetables.

Cervia Sweet Salt with PGI Balsamic Vinegar of Modena, born from a collaboration between Salina di Cervia and the “Acetaia Oro Divino” of Marco Castellina, is the perfect combination of two of Emilia-Romagna’s most popular products. This flavourful salt is made by combining Cervia Sweet Salt and balsamic vinegar and leaving it to mature in oak barriques. As it dries, it is gradually refilled to create a highly aromatic salt with a delicious flavour. Cervia Sweet Salt pairs perfectly with balsamic vinegar, as together they become a slightly sweet aromatic seasoning that embodies the traditional flavours of Emilia-Romagna. When cooking, we recommend letting the salt penetrate the food so that the balsamic aromas are gradually released.

RECOMMENDED WITH WHITE AND RED MEAT, BOILED FISH, CRUSTACEANS, RAW VEGETABLES AND SALADS, CHEESE.

Cervia Sweet Salt with truffle: recommended with meat, fish, vegetables, eggs, risottos and cheese.

Truffle is a truly wonderful ingredient with a unique flavour and intense aroma.  

Cervia Sweet Salt with Truffle is an earthy, rich aromatic salt that will jazz up any truffle recipe by bringing out the flavour and aroma of truffle.

We only use high-quality Italian truffle, which is cut into thin strips and left to rest together with Cervia Sweet Salt so that once dehydrated its aroma slowly permeates the salt. When it is finally ready, we immediately put it into small glass jars so that it can be used to make delicious dishes.

The White Gold of Cervia meets the Red Gold from Persia to create a truly wonderful aromatic salt. Premium Negin Saffron, harvested by hand as per tradition, gives Cervia Sweet Salt a unique flavour.

We chose Negin Saffron because it is the best quality and highest grade saffron. This precious spice was first grown in Persia (the name derives from the word “Zarparan”, meaning yellow) where it is still cultivated and harvested today. All the harvesting is done by hand over the span of a few days, then the stigmas are left to dry and carefully selected so that only the best in terms of colour and aroma go into the final product.

Cervia Sweet Salt with Saffron is a wonderful aromatic salt with a rich flavour and a rich past. Thanks to its unique flavour, it can be used for a variety of dishes.
