Cervia Sweet Salt

Cervia Sweet Salt is unique in the world. Its organoleptic characteristics make it a 'sweet' salt, because it is devoid of bitter chlorides. This is due both to the environmental conditions in which it matures and to human activity, which has steered nature over the years to produce a salt with these characteristics. Cervia salt is a whole sea salt. 

CERVIA SWEET SALT

Cervia Sweet Salt is the staple product of the Cervia salt pan. It is a whole sea salt, collected in a traditional way, naturally dried and washed with water containing a high concentration of salt, and with no additives. This is why it maintains all of the osmotic properties of the salt and the trace elements that can be found in seawater.

The coarse Cervia Salt can be identified by its packaging with the colours of the Cervia salt pan’s logo, blue on a white background. Cervia Sweet Salt is the staple product of the Cervia salt pan. It is a whole sea salt, collected in a traditional way, naturally dried and washed with water containing a high concentration of salt, and with no additives. This is why it maintains all of the osmotic properties of the salt and the trace elements that can be found in seawater. It comes in two versions: in a clear packet, showing the properties and naturalness of the product, and in coarse jute bags. A larger format is also available (5 kilograms) for restaurants.

SALE DEI PAPI

“Salfiore di Romagna”, also known as “Sale dei Papi” (Salt of the Popes), is the same Cervia Sweet Salt, but sifted to obtain medium-fine grains.

The second type of salt from the food range is “Salfiore di Romagna”, also known as “Sale dei Papi”. It is the same Cervia Sweet Salt but it is sifted to obtain medium-fine grains. “Sale dei Papi” can be recognised by its grain, much finer than that of Cervia Salt and with a burgundy packaging, reminiscent of the colour of salt ponds and flamingos. “Sale dei Papi” has the same characteristics as Cervia Salt: it is sweet and rich in trace elements, as it is simply collected, left to dry in the sun and washed using the salt pan “mother” water. The only difference is the sifting that, in this case, separates the larger salt crystals from the medium and smaller ones. It is available both in a clear packet and in a cotton bag, for domestic as well as for restaurant use.

SALE FIORE DI CERVIA

This salt is very light, pure white, highly soluble and with a naturally fine grain, as the crystals are collected before forming completely in the sun.

In addition to Cru Riserva, Cervia salt pan’s product range also includes “Salfiore di Cervia”, a fleur de sel salt that is hand-harvested from the top of salt ponds using a rake. This salt is the first to form and creates a sort of delicate crust on the surface of sea water as it evaporates. It is very light, pure white, highly soluble and with a naturally fine grain, as the crystals do not have time to form completely in the sun. This salt, collected by hand using a rake, is sold in small glass jars, each of them bearing an identification number. This salt is a high quality and delicious natural product.

RISERVA CAMILLONE

This salt is collected by hand using the so-called multiple collection method. It is a whole sea salt with a large grain size. Production is limited. Slow Food Presidium.

“Riserva Camillione” is recognised for its orange colour. This salt is collected by hand using the so-called multiple collection method. It is a whole sea salt with a large grain size. Production is limited. For this reason it is considered a “reserve salt”, a real Cru Riserva product, subsequently becoming part of the Slow Food Presidia. This is the only salt in the world produced in a traditional manner using the ancient method of multiple collection. It is packed raw, after being left to dry in the sun, covered by small cane curtains. “Riserva Camillone”, which takes its name from the small saltpans where it is collected, is only available in a 1 kilogram format in a clear packet or in a cotton bag.
